1.Crispy Kuih Bahulu

食譜:脆皮雞蛋糕

Ingredients:

A. – 50 grams of cream, 50 grams of milk

 

B. – 100 g of low-gluten flour, 20 g of orange powder and 2 g of baking powder

 

C. – 80g of egg yolk, 30g of caster sugar, 1g of salt and a few drops of vanilla extract

 

D. – 150g of egg white, 70g of caster sugar and 5ml of lemon juice

 

Directions:

Step 1. Place all of Ingredients A into a pot. Next, cook it on low heat. Then, turn off the heat when it starts to boil.

 

Step 2. Sift all Ingredients B and set aside for later use.

 

Step 3. In another steel pot, put material C in a straight egg beater and mix well to form a batter.

 

Step 4. Place Ingredients D into a bowl and mix well until it is foamy.

 

Step 5. Mix the two batter together to form the batter.

 

Step 6. Put the hamster-shaped baking tin on the stove and preheat it over a low fire, then use a brush to apply a thin layer of cream.

 

Step 7. Pour the batter into a mould placed on the baking tray. Fill the mould until it is nearly.

 

Step 8. Leave the batter to settle before placing it in an oven. Next, bake it until it for about 2-3 minutes

 

Step 9. Use a bamboo stick to pry the kuih out from the mould and the pastry is ready to be served.

 

 

 

2.Matcha Kuih Bahulu

食譜:抹茶雞蛋糕

Ingredients:

A. – 250 g of eggs, 100 g of fine sugar

 

B. 96 g of low-gluten flour, 20 g of orange powder, 4 g of matcha powder

 

C. – 30 g of cream

 

D. Red Bean Paste

 

Directions:

Step 1. Add water to a pot and heat it up. When the water is warm, switch the flame to low and set it aside for later.

 

Step 2. Whisk Ingredients A and set it aside for later.

 

Step 3 Next, use a mixer to beat the batter until it is foamy and smooth.

 

Step 4. Sift the Ingredients B. Then, add them into the batter from earlier. Stir well until they are mixed evenly.

 

Step 5. Melt an appropriate amount of butter in a pan. Then, add it in with the batter

 

Step 6. Add all the remaining ingredients into the batter and mix well. The Kuih Bahulu batter is now done.

 

Step 7. Pre-heat, the heart-shaped mould on the baking and preheat it over a low heat. Then use a brush to apply a thin layer of salad oil on the mould.

 

Step 8. Take an appropriate amount of batter and fill roughly 2/3 of the mould of the baking tray. Next, give the batter some time to settle and turn slightly solid.

 

Step 9. Repeat step 8 on the other mould (and put some red bean paste on top.

 

Step 10 Bake the mould for about 1 to 2 minutes until the batter changes colour.

 

Step 11 Use a wooden stick to pry the kuih out from the mould and it is ready to be served.

 

 

 

3.Honey Kuih Bahulu

Ingredients:

A – 250 g of eggs, 75 g of caster sugar, 25 g of honey

 

B – 100 g of low-gluten flour, 20 g of orange flour

 

C – 30 g of cream

 

Directions:

Step 1. Add water to a pot and heat it up. When the water is warm, switch the flame to low and set it aside for later.

 

Step 2. Whisk Ingredients A and set it aside for later.

 

Step 3. Next, use a mixer to beat the batter until it is foamy and smooth.

 

Step 4. Sift the Ingredients B. Then, add them into the batter from earlier. Stir well until they are mixed evenly.

C – 30 g of cream

 

Directions:

Step 1. Add water to a pot and heat it up. When the water is warm, switch the flame to low and set it aside for later.

 

Step 2. Whisk Ingredients A and set it aside for later.

 

Step 3. Next, use a mixer to beat the batter until it is foamy and smooth.

D – 30 g of cream

Step 1. Add water to a pot and heat it up. When the water is warm, switch the flame to low and set it aside for later.

 

Step 2. Whisk Ingredients A and set it aside for later.

 

Step 3. Next, use a mixer to beat the batter until it is foamy and smooth.

 

Step 4. Sift the Ingredients B. Then, add them into the batter from earlier. Stir well until they are mixed evenly.
