1.Tuna Salad and Avocado Boat

Ingredients:

4 avocados

200g of Tuna

A cup of Corn kernels

One small cucumber

1 Beefsteak tomato

1/4 onion

3 tablespoon of mayonnaise

Salt, parsley, black pepper

 

Steps:

1. Wash the cucumber, tomato and onion and dice for later use

2. Take out a large bowl, mix in corn kernels with diced cucumber, diced tomatoes, diced onions, tuna and mayonnaise

3. Mix well with a fork. Seal with plastic wrap and refrigerate for 2 to 3 hours

4. Wash the avocado, cut it in half and remove the seeds. Place the tuna salad over the avocado.

5. Sprinkle with salt and black pepper and decorate with parsley before serving.

 

2.Spicy Tuna and Cucumber Roll

Ingredients:

2 seedless cucumbers

200g of Boiled tuna

50g of Cream cheese

1 teaspoon of black pepper

1/2 teaspoon of salt

Sauce:

2 tablespoon of mayonnaise

1 tablespoon of hot sauce

 

Steps:

1. Wash the cucumbers and cut them into thin slices with a paring knife. Use a kitchen towel to gently dry the cucumber slices to avoid excessive moisture.

2. Take out a large bowl and mix the tuna, cheese, black pepper and salt in a bowl. In another small bowl, mix in the hot sauce and mayonnaise.

3. Spread the cucumber slices on the cutting board and spread the tuna sauce evenly with a small spoon.

4. The tuna sauce does not require much, just let the cucumber slices stick together.

5. Carefully roll from one side to the other, roll up the cucumber slices, place them on a plate and drizzle them with sauce before serving.

 

3.Tuna and Potato Pancakes

Ingredients:

200g of Tuna

2 medium potatoes

2~3 of Shallots

1/2 cup of corn

1 cup of bread flour

1 egg

Lemon zest

1/2 teaspoon of salt

1/2 tsp ground of black pepper

 

Steps:

1. Cook the potatoes with their skins and let them cool, peel them and press them into puree. Wash the green onions and chopped them. Drain the tuna for later use.

2. Take out a large bowl and add in mashed potatoes, tuna, corn, half a cup of bread flour, eggs, chopped green onions, lemon zest, black pepper and salt. Stir the ingredients evenly with a fork.

3. Take out a shallow pot and pour the remaining half cup of bread flour. Take about half a cup of tuna and mashed potatoes and shape it into a round cake by hand. Dip both sides of the round cake evenly with bread flour.

4. Take out a non-stick pan and pour two tablespoons of olive oil. After the pan is hot, fry the round cake on each side for 3 to 4 minutes over  medium-to-low heat. Fry until both sides are browned and it is now ready to be serve.

 

4.Tuna and Cucumber Rice Bowl

Ingredients:

1 Can of tuna

300g of Cucumber

1 egg

250g of rice

Seasoning:

Salt, MSG

 

Steps:

1. Open the canned tuna and drain the sauce for later use.

2. Put a little cornstarch after the eggs are broken

3. Firstly, heat up the pan with oil then pour the egg mixture into the pan for 3 times and fry. Then, shred.

4. Peel the cucumber and cut into shredded cucumbers for later use.

5. Put the cucumbers in the hot oil in the pan and fry them until they are fully cooked. Add in the tuna and egg shreds and pour them on the rice.

 

5.Tuna Roll

Ingredients:

1 can of tuna

1 cucumber

1 egg

20g of Onion

250g of rice

Seasoning:

20g of Mayonnaise

1 piece of seaweed

 

Steps:

1. Open the can tuna and drain the juice for later use.

2. Put a little cornstarch after the eggs are broken

3. Firstly, heat up the pan with oil then pour the egg mixture into the pan for 3 times and fry. Then, shred.

4. Cut the cucumber into 4 strips, remove the middle seeds and set aside.

5. Place the seaweed on the bamboo curtain, then add in white rice,  tuna, cucumber, egg shreds and squeeze mayonnaise

6. Spread onion shreds last and roll it up from the inside to the outside.
