1.Milky Scallops


600g scallops

A moderate amount of unsalted butter

A moderate amount of shredded cheese

Salt and pepper powder




Step 1. Put 1 small lump of unsalted butter in the scallops and cover the scallops in a layer of shredded cheese. Next, sprinkle with salt and pepper on top for flavour.


Step 2. Preheat the oven at 150°C for 10 minutes, and bake the scallops at 200°C for 20-25 minutes after preheating.




2.Steamed Scallops with Vermicelli


12 scallops

A small piece of ginger

A handful of vermicelli (soak first)

3 green onions

8 cloves garlic

150ml Water





2 tablespoons of Soy Sauce

A moderate amount of Oyster sauce

A moderate amount of Rice Wine

A moderate amount of Sesame Oil

A moderate amount of White Pepper



Step 1. Once the scallops are clean, soak the vermicelli in cold water until softened, remove them and cut into small pieces for later use.


Step 2. Mince garlic kernels, green onions and ginger.  Set them aside for now.


Step 3. Heat 1 tablespoon of oil from the pot, then place 2 minced ginger and a little garlic to sauté for a while. Next, add a little seafood broth, vermicelli, 1 teaspoon of oyster sauce, and let the Ingredients simmer in the pot.


Step 4. Preheat the steamer and prepare the finished plate.


Step 5. Take the remaining garlic, a little seafood stock, sesame oil, 1 tablespoon of oyster sauce and 1 tablespoon of soy sauce, mix and mix well to form a garlic paste, set aside.


Step 6. Place the scallops on a plate and drizzle a little rice wine over it to remove the fishy odor. Then, sprinkle a little white pepper for some flavours and place a little vermicelli each scallop, then top with garlic paste. Next, cover the scallops up and steam them for 2 minutes. Your dish is ready to be served.



3.Baked Scallops with Seasonal Vegetable White Sauce



4 scallops

2 baby corn

2 cloves garlic

A moderate amount of shredded cheese

A moderate amount of carrot



3 spoons white sauce

A pinch of salt

A pinch of black pepper

A moderate amount of butter






Step 1. Dice the carrots, mince the garlic and cut baby corn into small slices. Next, wash scallops and set them aside.


Step 2. Cook minced garlic with butter in a hot pan until they become fragrant. Next, add diced vegetables in and stir fry.


Step 3. Add white sauce in the same pan. Season the sauce with salt and black pepper.


Step 4. Put the scallops in a bowl and pour the sauce over it. After that, spread a layer cheese shreds until you have cover the entire top of the bowl.


Step 5. Preheat the oven for 5 minutes. Then, put the scallops in and bake until the surface is golden brown.

4.Steamed Vermicelli Scallops with Garlic

6 scallops

A moderate amount of vermicelli-soak softly and set aside.

1 tablespoon chopped green onions

2 tablespoons soy sauce

2 tablespoons oyster sauce

1 teaspoon sugar

1 tablespoon sesame oil

1 tablespoon cooking oil



Garlic sauce:

15 cloves garlic (minced and set aside)

1 tablespoon minced ginger

1 chili (cut finely and set aside)

2 tablespoons cooking oil



Step 1. To make the garlic sauce, first preheat a pan with oil. One the oil starts to boil, add minced ginger, minced chili, and half of the minced garlic. Next, turn on low heat and sauté the ingredients until the minced garlic changes color. Afterwards, add the other half of the minced garlic and stir for a few minutes and pour them out then set aside.


Step 2. Next, it to prepare the topping. Mix the soy sauce, oyster sauce, and sugar together. Next, stir well and put them aside for later use.


Step 3. Take a deep bowl, spread the soaked vermicelli evenly, and pour 1 tablespoon of water.


Step 4. The scallop meat is place on top of the vermicelli.


Step 5. Spread the garlic sauce on of the scallops.


Step 6. Preheat a steamer with water. When the water in the steamer boils, put in the scallop bowl in and steam it for 8 minutes. When it is done, take them out and pour the topping prepare earlier then sprinkle with some chopped green onion.


Step 7. Heat up the sesame oil with cooking oil. Once they are boiled, pour the sauce on the chopped green onion and topping. Your scallops are ready to be served.





5.Spicy Scallops


500g scallop meat

1 Onion

1 Scallion

1 Green Garlic Leaf

A small piece of ginger

5 Chaotian peppers

5 Cloves Farlic

A moderate amount of pepper

A moderate amount of dried chilies

A tablespoon cooking wine

2 tablespoons light soy sauce

2 tablespoons balsamic vinegar

A scoop of Spicy Red Oil Broad-bean Sauce






Step 1. Prepare the onion, ginger, garlic, pepper and dried chilies by cutting them into small pieces or shreds. (Depending on the ability to eat spicy peppers)


Step 2. Boil a pot of water. Once the water boils, pour a tablespoon of cooking wine in follow by the scallops.


Step 3. Take the scallops out after about half a minute and drain all the water from the pot.


Step 4. Preheat a pan with some oil. Once the oil boils, add dried chili and pepper and stir well.


Step 5. Pour the Spicy Red Oil Broad-bean sauce in and stir fry until the a reddish oil separate from the sauce.


Step 6. Pour in the other ingredients together and stir fry until it becomes fragrant.


Step 7. Pour the scallops into the pan, add 2 teaspoon of light soy sauce, 2 teaspoon of balsamic vinegar and a pinch of salt. Then, stir the scallops until it is evenly covered in a layer of the sauce. The scallops are ready to be served.
