1.Traditional Noodles with soybean paste.

Ingredients for fried sauce:

A bag of dried yellow sauce,  sweet noodle sauce, a piece of pork belly, and ginger.



Cucumber, bean sprouts, radish, green beans, soybeans, celery, coriander, Hand rolled noodles



1 Clean the soybeans and place them in a pot. Add in water, salt and star anise to boil, then turn to low heat and cook for 30 minutes.

2 Cut the pork belly into cubes; Place the dried yellow sauce and sweet noodle sauce into a large bowl at a ratio of 2 to 1 and then add a small bowl of water to dilute. Mince the ginger and set aside.

3 Prepare the dishes. Shred the cucumber, radish, parsley and celery.

4 Add water to the pot. Boil the water, blanch the bean sprouts and remove the water for later use.

5 Blanch the diced celery and green beans in turn and set aside.

6 Peel the cooked soybeans and set aside.

7 Put the diced pork belly in a pot and stir fry.

8 Stir-fry until the pork belly is oily and when the surface turns slightly yellow. Add in the minced ginger and stir-fry for a fragrance.

9 Place the sauce in the pan and stir fry.

10 Stir fry until the sauce becomes thicker and heavier in color and there is a layer of oil on the surface of the sauce. Then, turn off the heat.

11 Cook the noodles. The boiled noodles should be placed in boiled water that has been cooled in advance and passed over water. Then add in the noodles and mix it with fried sauce and enjoy!



It is best to use pork belly to make fried sauce, which is fat or thin. The taste is delicious.
There is no need to add salt to make fried sauce, because the sauce itself is already very salty.
I used dried soybeans, so it takes a long time to cook. You can also soak the soybeans in advance, and the cooking time will be much shorter.

2.Eggplant Noodles with soybean paste.



1 eggplant, 1 cucumber, green onion and ginger, half a bowl of soybean paste, 100 grams of sweet noodle sauce, noodles



1 Peel and dice the eggplant. Shred the cucumber and mince the scallion and ginger.

2 Take out a large bowl, place the sweet noodle sauce and soybean paste in and  pour a little water and stir evenly.

3 Pour oil into a pot. After the oil is hot, place the eggplant in the pot and start to stir fry. (The amount of oil is a little more than usual when cooking)

4 After the eggplant has softened and filled in oil, add the chopped green onion and ginger and stir fry until it is fragrant.

5 Pour the well-stirred sauce into the pot.

6 Stir-fry the sauce and eggplant evenly, then add 1 tablespoon of white sugar and simmer for 3-5 minutes.

6 Boil a pot of water and cook the noodles.

7 Scoop a bowl of noodles, placed a spoonful of sauce and add cucumber shreds before serving.


3.Mushroom Noodles with soybean paste




300 grams of shiitake mushrooms, 100 grams of soy sauce, 100 grams of sweet noodle sauce, 1 cucumber, 1 carrot, noodles,  green onion, ginger and garlic



1 Take out a large pot, place the sweet noodle sauce and soybean paste into the pot then pour a little water and stir evenly.

2 Cut the shiitake mushrooms into small cubes and mince the green onion, ginger, and garlic for later use.

3 Pour oil into the pot to heat up, then place in the diced mushrooms in the pot and stir-fry until the mushrooms are soften.

4 Place the chopped green onion, ginger and garlic into the pot and stir-fry until the aroma is fragrant.

5 Pour the sauce into the pot and stir fry evenly.

6 Place 1 tablespoon of sugar and 2 tablespoons of oyster sauce into the pot, stir evenly and start to simmer on low heat.

7 When the color of the sauce is getting thicker and when the oil seeps out, place white sesame seeds in the pot and stir-fry again before turning off the heat.

8 Boil a pot of water and cook the noodles.

9 Take the bowl of noodles, add in some shredded cucumbers and carrots and then scoop a spoonful of sauce. Now it is ready to be served.


4.Egg Noodles with soybean paste



5 eggs, 40 grams of sweet noodle sauce, 40 grams of soy sauce, chives



1 Beat the eggs.

2 Place the sweet noodle sauce and soybean sauce in a large bowl. Then, pour in 100 ml of water and stir well

3 Pour oil into the pot. After the oil is hot, pour the eggs into the pot.

4 Use chopsticks to quickly break up the eggs (At this time, you can turn the fire down a bit.)

5 Pour the stirred sauce into the pot, stir evenly and start to simmer on low heat. (If you like the sauce thicker, you can add a little soy sauce.)

6 When the soup becomes thicker and thicker, add half a spoon of sugar and serve. When eating, sprinkle a little chopped green onion to garnish. (Because the sauce is very salty, there is no need to add salt.)

7 You can also mix with some vegetables


5.Old Beijing Noodles with soybean paste


300g of minced pork, 1 green onion, 4 garlic, 1 small piece of ginger, fried sauce, 1 spoon of dried chili powder, vermicelli,  cucumber and a  carrot



1 Prepare the minced pork, shred the cucumber, carrots, green onions, ginger, and garlic into small pieces

2 Prepare the sauce: 1 tablespoon of soybean paste, 1 tablespoon of sweet noodle sauce, 1 tablespoon of dark soy sauce, 2 tablespoons of light soy sauce and half a tablespoon of thirteen spices. Stir well and set aside.

3 Put oil in the frying pan of the breakfast machine to heat up, add in minced pork and fry until the color changes. Then, add in 1 tablespoon of chili powder and fry evenly before pouring in the onion, ginger and garlic and fry evenly. Lastly, pour in the sauce and simmer until the sauce is thicken

4 After the water in the soup pot has boiled,  cooked the noodles. Once done,  remove them and put them in a bowl. Place the shredded carrots and cucumbers on top and pour the fried sauce on them. Mix well and eat!
