Ingredients

1 Chicken Drumstick

6g of ginger

4 spoons of Sesame Oil

4 Shiitake mushrooms

Goji Berries

A bunch of Noodles

250ml of Rice wine

2 bowls of Broth

 

Directions:

Step 1. Preheat a pan with sesame oil, add the ginger to the pan and fry for awhile. Then, add the chicken in and fry until the essence start to come out, pour some rice  wine and broth in with the chicken.

 

Step 2. When the broth boils, add the shiitake mushrooms and goji berry in.

 

Step 3 Cook until the shiitake mushrooms turn soft, then the noodles in to cook. Cook the noodles for a while and the dish is ready to be served.

 

2.Sesame Oil Shrimp

高麗菜麻油鮮蝦煮

Ingredients:

15 Shrimps

1/4 Cabbage

2.5 tablespoon of Sesame Oil

10 slices of Ginger

1 tablespoon Goji Berries

8 Red Dates

300ml of Rice Wine

A pinch of salt

 

Directions:

Step 1. Cut ginger and cabbage into thin slices . Pour a tablespoon of rice wine to marinate each goji berries and red dates.

 

Step 2 Wash the shrimps and remove the unwanted parts of the shrimps.

 

Step 3. Heat the pan without oil, add the sliced ​​ginger and fry it over a medium-low heat for 2-3 minutes until the edges are curl slightly. 

 

Step 4. Pour in sesame oil in and stir fragrant over a low heat until the ingredients release aroma.

 

Step 5. Pour in the prepared red dates, and goji berries with more rice wine. Let them cook over medium-high heat for about 3 minutes to allow the alcohol to evaporate.

 

Step 6. Add the shrimp in, stir fry them for about 1-2 minutes on medium-high heat. Once the shrimp turn red, take the shrimp out of the pan. Set them aside for now.

 

Step 7. Add cabbage and stir fry on medium-high heat until they softened

 

Step 8. Place the fresh shrimp back in and on the cabbage. Then,  sprinkle some salt and cover the pan up. Let it simmer for about 2 minutes and turn off the heat.

 

Step 9. The dish is now ready to be served.

 

3.Sesame Oil Roasted Pork Rice

麻油燒肉丼飯

Ingredients:

200g of Pork Belly slices

White sesame Seeds

Chopped Green Onion

1 tablespoon of Pure Sesame Oil

2 tablespoons of Soy Sauce

1 tablespoon Mirin

1 tablespoon Rice Wine

 

Directions:

Step 1. Mix all the ingredients together and allow it to marinate. (except chopped green onion and sesame seeds)

 

Step 2. Marinate pork belly for about 20 minutes. Then, separate it from the other ingredients.

 

Step 3. Fry the pork belly slices.

 

Step 4. Arrange the pork slices in a bowl with white rice, and sprinkle shredded green onions with some sesame oil. The dish is now ready to be served.

4.Sesame Oil White Radish and Hericium Soup

麻油猴頭菇燉白蘿蔔湯《 麻油料理│素 》

Ingredients:

1 White Radish

6 Hericium

30 slices of Ginger

Red Dates

1.5 tablespoons of Sesame Oil

A moderate amount of MSG

 

Directions:

Step 1. Wash and dry ginger first, then cut them into thin slices (the thinner the better!) and evenly arrange them in a stainless steel pan. Cut the white radish into cubes.

 

Step 2. Stir-fry ginger slices over low heat for about 8 minutes

 

Step 3. Add a tablespoon of pure sesame oil and stir fry ginger flakes release its aroma.

 

Step 4. Add white radish cubes and stir fry evenly with sesame oil and ginger slices.

 

Step 5. Add hericium and red dates with hot water. Now, turn the heat to medium-high and stir fry them until they are well done.

 

Step 6. Turn the heat down and continue to boil for about 45 minutes. Add an appropriate amount of salt to tweak the soup to your preference.

 

5.Sesame Oil Mushroom Chicken Rice

Ingredients

1 Litre of Rice Wine

2 tablespoon Sesame Oil

Hongxi Mushroom 1 pack

2 Ginger

4 cups of White Rice 

3 boneless chicken thighs

 

Directions:

Step 1. Slice tender ginger, add sesame oil and ginger slices to stir fragrant

 

Step 2. Cut the boneless chicken thighs into small pieces and set aside for later use

 

Step 3. Add chicken thighs and stir fry until golden brown.

 

Step 4. Once the chicken are fried, add the white rice.

 

Step 5. Add the Hongxi mushrooms and a litre of rice wine.

 

Step 6. Cook in a pot on medium to low flame for about 25 to 30 minutes. The dish is now ready to be served.
