1.Steamed Egg with Shrimp
Ingredients:
2 eggs
10 shrimps
Chicken Essence
Salt
Cooking wine
Ginger
Chopped green onion
Diced carrots
Steps:
1 Beat the egg around sixty or seventy times. Peel the fresh shrimp and cut into small cubes
2 Boil about 200-230g of water in a pot (I used chicken broth). Add chicken essence, salt, and ginger. The taste will be saltier than usual (After adding egg liquid, the taste will not be too light)
3 Bring the water to a boil and pour in into a high-side plate before adding the shrimps. Slowly stir the soup with chopsticks, and slowly add in the egg liquid. Stir it gently and make sure your movement are slower.
4 Place in it the pot and steam for seven or eight minutes. Make sure the fire is not too high as the eggs will foam easily.
5 Sprinkle chopped green onion and carrots to finish the dish.
2. Shrimp stuffed with okra
Ingredients:
Shrimp 150g
4 slices of ginger
5g of Salt
10g of Cooking wine
2g of White pepper powder
10g of Steamed Fish Soy Sauce 10g
15g of Vegetable oil
Small handful Dry noodles
4 okra
Minced garlic millet spicy
Steps:
1 Chop the thawed shrimp into fine pieces. Use the back of a knife to chop the shrimp into puree.
2 Place the chopped shrimp paste into a bowl and add salt, white pepper, cooking wine, and ginger. Mix them well and marinate them for 15 minutes.
3 While marinating the shrimp paste, soak the dried noodles in hot water to soften. Wash the okras
4 Cut the okras in half, the seeds of the okra can be put into the shrimp paste as well.
5 Remove the soaked noodles and place it into the plate. Pour in the steamed fish soy sauce and mix well
6 Put the mashed shrimp into the okra and put the okra on top of the noodles. After steaming the steamer, put the plate in the steamer and steam for 8 minutes.
7 After steaming, take it out and heat up the oil in a pan and sauté the minced garlic and millet. Lastly, slowly pour it on the shrimp paste.
3. Fried Rice with Shrimp and Egg
Ingredients:
1 bowl of rice
Shrimp
2 shallots
2 garlic cloves
1 egg
1 tablespoon of soy sauce
Black pepper
Salt (can be omitted)
Steps:
1. Prepare the ingredients: Clean and wash them. Chopped the green onions and mince garlic.
2. Turn the pot on medium heat and put in oil. Add in the eggs after the oil is hot and stir quickly until the egg has solidified and the aroma of the eggs is released.
3. Add minced garlic and shrimp and sauté until it has fragrant.
4. Add in white rice and mix it. Stir fry until the rice is loosen.
5. Add in soy sauce, salt, black pepper and chopped green onion. Stir and fry the onions and your done.
4.Fried snow peas with shrimps.
Ingredients:
200g of Shrimp
200g of Snow peas
20ml of Cooking wine
5g of Salt
5g of shallots
Ginger
Steps:
1.Peeled the shrimp and clean the snow peas
2 Remove the filaments on both sides. Wash and blanc the snow peas and dry it afterwards.
3 Put oil in the pot and fry the ginger slices
4 Add in shrimp and snow peas
5 Add the chopped green onion, salt, cooking wine and stir until the shrimp changes color.
6 Pour in the blanched snow peas and stir-fry them well. Your dish is now complete and can be removed from the pan.
5.Egg Shrimp
Ingredients:
200g of Shrimp
Salt (to wash away mucus) e
3 eggs
1 green onion
3~4 slices of ginger
Marinade:
1/8t of Salt
1/2T of Rice wine
1/2T of Corn starch
Seasoning:
1/6t of Salt
White pepper
Steps:
1 Mix the shrimps with salt and place them for 5 minutes, then wash off the salt and wipe dry with a napkin. Mixed the dried shrimp with marinate and marinate them for 20 minutes.
2 Beat the eggs and add in seasonings before mixing them well. Cut the green onions into sections
3 Put 3~4T of oil in the pot. After the oil is warm, add in the prawns and stir-fry them. Put the prawns in the egg mixture and mix well.
4 Use the oil in the original pot and place the shallots and ginger slices into the pot for 1~2 minutes to fry until it becomes fragrant. Pour in the ginger and shrimp egg liquid into the pot at the same time.
5 Don’t move it at first. When you feel the egg liquid starts to solidify, use a spatula to quickly scramble the eggs in circles.
6 Lift the handle of the pot and turn the pot to make the egg liquid slide onto the bottom of the pot. Once most of the egg liquid has solidified, immediately remove it from the fire and put it on a plate to avoid overcooked eggs.
