1.Taro Pork Ribs Cup
食譜:芋頭排骨盅

Ingredients:

1/2 of catty short ribs

5 quail eggs

3 scallop rolls

1 taro

6 straw mushrooms

Seasoning:

1 teaspoon of salt

1 teaspoon of pepper

Marinade:

1 teaspoon of soy sauce

1 teaspoon of sugar

1 teaspoon of pepper

1 teaspoon of five-spice powder

1 teaspoon of cornstarch

 

Steps:

1.Wash the small ribs and cut into small pieces, add in all the marinade and mix well. Once done,  let it stand for about 30 minutes until the ribs absorb the flavor.

2 Cut the straw mushrooms in half and blanch them in boiling water before picking them up.  Peel the taro and cut into large pieces for later use.

3 Heat up  a half pot of oil until the oil temperature is about 170°C and put in the taro and fry it slightly, then remove and drain the oil

4 Put the pork ribs in the same oil pan and fry the pork ribs over medium heat until the surface turns crispy. Pick it up and drain the fat.

5 Take a stew pot and add in quail eggs, scallop rolls, straw mushrooms, taro and ribs.

6 Then add in 80% full of water and cover the cup with plastic wrap.

7 Take a Chinese pot, add half a pot of water to boil and put it in the stewing pot. Steam on high heat for about 20 minutes and take it out

8 Add all seasonings and mix well.

 

2.Stewed Pork Ribs

Ingredients:

1kg of Pork ribs and tail bone meat

2 liters of water

Seasoning:

1 Chinese herbal medicine (special medicine package for stewed pork ribs)

1 bottle of wine

 

Steps:

1 Wash the pork ribs and tailbone meat and put them in boiling water to blanch them. Once done, remove them and rinse them with cold water for later use.

2 Take a soup pot and add in water, Chinese herbal medicines, 1/2 bottle of rice wine and the ribs. Cover the pot and simmer over low heat for about 1 hour

3 Add the remaining 1/2 bottle of rice wine and continue to cook for 5 minutes on low heat.

 

3.Steamed Pork Ribs with Tempeh

Ingredients:

1/2 of catty short ribs

1 teaspoon of chopped green onion

1 teaspoon of minced ginger

1 teaspoon of minced garlic

1 teaspoon of minced chili

1 teaspoon of sesame oil

Seasoning:

1 tablespoon of dried tempeh

2 teaspoon of oyster sauce

1 teaspoon of sugar

Vinegar

Marinade:

1 tablespoon of wine

A pinch of salt

Sugar

Pepper

1 tablespoon of cornstarch

 

Steps:

1 Wash the small ribs and cut into small pieces.  Add in all the marinades, mix them well and leave it for about 20 minutes to absorb the flavor. Soak the dried tempeh in water until it softens.

2 Heat up the oil until the oil temperature is about 170°C, then add the small ribs.

3 Fry for about 30 seconds over medium heat to remove the drained fat and put it in a plate and let it cool for later use.

4 Mix all the seasonings well with the ribs and put them into the bamboo steamer together with the plate, and cover the steamer lid.

5 Take out a Chinese pot and add half a pot of water to boil.  Place it on the bamboo steamer and steam on high heat for about 30 minutes before taking it out

6 Add sesame oil and sprinkle with chopped green onion, ginger, garlic and chili to finish the dish.

 

4.Sweet and sour pork ribs

食譜: 糖醋排骨

Ingredients:

12 Short ribs

1/4 of onion

1/2 of green pepper

1 piece of carrot

3 garlic cloves

2 tablespoon of sweet potato powder

Cornstarch

Seasoning:

3 tablespoons of tomato paste

3 teaspoon of sugar

3 tablespoon of vinegar

2 tablespoon of water

Marinade:

1 egg

1 teaspoon of wine

2 teaspoon of soy sauce

 

Steps:

1.Wash the small ribs and cut into small sections. Stir in the marinade and let it stand for about 20 minutes until the flavor is absorb. Coat the surface of the small ribs evenly with sweet potato powder for later use.

2 Wash the onion and cut into large slices; wash and slice the carrots and green peppers and flatten the garlic with the back of a knife

3 Add 1 tablespoon of water to cornstarch to make cornstarch water for later use.

4 Heat a half pot of oil until the oil temperature is about 170°C before putting in the ribs. Fry on low heat for about 3 to 4 minutes until  it is cooked

5 Switch to high heat and fry for about 1 minute, then remove and drain the fat.

6 In a separate pot, add 2 tablespoons of oil to the hot pot, throw in the garlic and sauté. Add in the onion and carrot  and stir fry until they soften slightly.

7 Add in all the seasonings and boil, add cornstarch and water to help thicken.

8 Throw in the ribs  and the green pepper  into the pot  and stir-fry until the flavor is fully absorbed.

5.Braised Pork Ribs with Scallions

Ingredients:

2 pork loin

3 green onions

Seasoning:

1 teaspoon of sesame oil

3 tablespoon of soy sauce

1 teaspoon of wine

1 tablespoon of sugar

1 teaspoon f pepper

1/2 cup of water

Marinade:

1 teaspoon of minced ginger

1 teaspoon of minced garlic

1 tablespoon of soy sauce

1 teaspoon  of wine

1 teaspoon of cornstarch

 

Steps:

1 Rinse the ribs and beat it a few times with the back of a knife or a meat hammer. Add in all the marinade, mix well and leave it for 1 hour until the flavor is absorbed. Cut the green onion into long pieces for later use.

2 Heat up a half pot of oil  about 170°C, and put in the ribs and drain the oil.

3 Fry the meat slightly over medium heat until the meat changes color, then remove and drain the fat.

4 In a separate pot, mix in all the seasonings evenly and pour into a pot and boil.

5 Put in the scallion and scallion  and marinate slowly until half of the seasoning soup is left and the scallion is cooked and tender.
