1.Chicken Noodles

Ingredients:

A piece of Chicken Breast

1 Cucumber

1 serving of Noodles

1 Green Onion

1 slice of Ginger

24 cloves of Garlic

1 tablespoon of chili noodles

Salt

1 teaspoon of Sugar

3 tablespoons of Light Soy Sauce

2 tablespoons of Aged Vinegar

1 tablespoon of Oyster Sauce

 

Directions:

Step 1. Shred the cucumber. Next, place the chicken breast in a pot of cold water. Then, add a spoonful of cooking wine, green onion and ginger. Boil the pot for 10-15 minutes.

 

Step 2. Remove the water from the pot and tear the chicken into thin strands. After the noodles are cooked, soaked them in ice cold water and set aside for later.

 

Step 3. To make the sauce, add a spoonful of green onion, a spoonful of minced garlic, a spoonful of chili noodles, a spoonful of white sesame seeds and oil in a bowl. Then, stir well.

 

Step 4. Next, add three spoons of light soy sauce, two spoons of vinegar, one spoon of oyster sauce, an appropriate amount of salt and one teaspoon of sugar into the bowl. Then, stir well.

 

Step 5. Drizzle the prepared sauce on the cold noodles. Next, add the chicken strips, cucumber and a little peanut on top. Stir well and the noodles are ready to be served.

 

2.Shrimp Cold Soba Noodles

Ingredients:

250g of Soba Noodles

24 Green Beans or Snow Peas

8 Carrots

8 Shrimps

 

Seasoning:

1 lemon

Black Pepper

¼ teaspoon of Salt

1 tablespoon of Soy Sauce

 

Directions:

Step 1. Boil the soba noodles in water. After it is cooked, cool thoroughly in ice water.

 

Step 2. Add some salt and oil to the water used to cook the soba. Next, blanch the green beans, carrot shreds, and the shrimps in the water.

 

Step 3. To make the sauce; mix the lemon juice, salt, black pepper, olive oil, and soy sauce.

 

Step 4. Now, remove the soba noodles from the ice water, mix with all the ingredients and then drizzle the sauce over it. Mix well and the soba noodles is ready to be served.

 

3.Korean Kimchi Cold Noodles

Ingredients:

100g of Whole Wheat Noodles

150g of Korean Kimchi

30g of Cucumber Shreds

1/2 a Hard-boiled Egg

40g of Cooked Meat Slices

1 teaspoon of Cooked Sesame Seeds

10 g of Chopped Green Onion

 

Seasoning:

10g of Garlic

1 tablespoon of Korean Chili Paste

2 teaspoons of Caster Sugar

2 tablespoon of Cold Water

2 teaspoons of Sesame Oil

 

Directions:

Step 1. Mix all the seasonings together. Then, add chopped green onion and cooked sesame seeds for the sauce. Cut Korean kimchi into small pieces.

 

Step 2. Prepare a pot of boiling water, add the whole wheat noodles and cook. When the noodles are cooked, leave the them out to cool.

 

Step 3. Place shredded cucumber, Korean kimchi slices, cooked pork slices and hard-boiled eggs in a plate.

 

Step 4. Pour the noodles and sauce prepared earlier. Mix well before serving and the dish is ready.

 

4.Yunnan Cold Noodles

Ingredients:

100 g of Dry Rice Noodles

30 g of Mung Bean Sprouts

15 g of Cucumber Shreds

3 kernels of Garlic

1 teaspoon of Cooked Sesame Seeds

1 tablespoon of Cooked Garlic Peanuts

1/2 teaspoon of Minced Garlic

1/2 teaspoon of Ginger

 

Seasoning:

1 tablespoon of Salad Oil

1 teaspoon of Chili Oil

1 tablespoon of Black Vinegar

1 teaspoon of Sugar

1/2 teaspoon of Salt

3 tablespoons of Cold Water

 

Directions:

Step 1. Blanch the noodles in boiling water for about 2 minutes. Then, remove and rinse with cold water. Next, slice the garlic kernels. Blanch the mung bean sprouts until cooked and set aside.

 

Step 2. Heat up some salad oil the pan, add the garlic slices and fry until it turns golden. Then, turn off the flame and add the cooked sesame seeds and garlic peanuts

 

Step 3. In another bowl, mix garlic, ginger, black vinegar, sugar, salt, and water together.

 

Step 4. Put the rice noodles on a serving plate. Then, add the mung bean sprouts, cucumber shreds and chili oil on the noodles. Add the other ingredients on top of the noodles and mix well. The dish is ready to be served.

 

5. Curry noodles

170g of Oil Noodles

50g of Shredded Cooked Chickens

40g of Shredded Carrot

60g of Shredded Cucumber

Curry Sauce

 

Directions:

Step 1. Prepare a pot of boiling water. Boil the shredded carrots. When they are cooked, leave them out to cool.

 

Step 2. Put the oil noodles on a plate. Next, add shredded chicken, carrots, and cucumbers on the noodles.

 

Step 3. Pour the curry sauce on the noodles. Mix well and the noodles are ready to be served.
