1.Gold and Silver Egg Amaranth
1 Cooked Salted Egg
1 Century Egg
300g of Amaranth
1/2 teaspoon of Minced Garlic
1/2 bowl of Water
1/4 teaspoon of Salt
1/8 tsp Chicken Seasoning Powder
Step 1. Crack and dice century eggs. Next, shell and dice cooked salted eggs, set aside.
Step 2. Wash the amaranth and cut into sections. The, set it aside.
Step 3. Heat up 2 tablespoons of salad oil in a pan. Next, add minced garlic into the pan and sauté.
Step 4. Add water, century egg and salted egg into the pan. Then, stir-fry well. After that, add the amaranth and seasonings in. Cook until the amaranth softens and the dish is ready to be served.
2.Scrambled Eggs with Amaranth
200 g of Amaranth
15 g of Minced Garlics
15 g of Chili Flakes
1/2 teaspoon of Salt
1/4 teaspoon of Sugar
1/2 teaspoon Chicken Seasoning Powder
60ml of Water
Step 1. Wash amaranth and cut it into pieces. Next, beat the eggs and set aside for later.
Step 2. Heat up an appropriate amount of salad oil in a pan. Next, add minced garlic and chili flakes. Stir fry them until turn fragrant.
Step 3. Pour the beaten egg liquid into the pan. Then, add water and stir evenly.
Step 4. Add salt, sugar and chicken powder into the pan to add flavour to the dish.
Step 5. Add the amaranth and stir well. The dish is ready to be served.
3.Grilled Amaranth with Mushroom
A pack of Enoki mushrooms
A pack of Hongxi Mushroom
A little Ginger
100ml of Soy sauce
100ml of Mirin
600ml of Water
A bunch of Amaranth
1 teaspoon of White Sesame Seeds
1 chili (shredded)
Step 1. Cut the enoki mushroom and hongxi mushroom into cubes. Then, stir-fry directly in a dry pan.
Step 2. After the mushrooms are completely dried, fry them for another 3 minutes.
Step 3. Add soy sauce, mirin, water, ground ginger, sesame oil and kelp into the pan. Boil the ingredients until the sauce thickened. Then, take the sauce out and set aside.
Step 4. Wash the amaranth with hot water and add a spoonful of salt. Next, blanch the amaranth in ice water, then squeeze out the water. Then, cut off the dish, and top with mushrooms.
4.Fried Clams with Gold and Silver Amaranth
120g of Clams
80g of Amaranth
1 Salted Egg
3 Minced Garlic
5g of Salt
5g of White Pepper
Step 1. Soak the clams in water for about half an hour to ensure thoroughly clean. After washing the amaranth, remove the rough part of the amaranth. Cracked the salted egg and dice it finely.
Step 2. Heat up a pan, sauté the minced garlic over medium flame. Next, add salted egg in and stir fry for 10 seconds, before adding in the amaranth.
Step 3. Stir the scrambled salted eggs continuously to avoid the egg from being charred.
Step 4. Add the clam in after washing. Add salt and white pepper, then mix well. After that, cover the pot and let the ingredients simmer for 2 to 3 minutes.
Step 5. When the clams open up, take the meat out of the shell. The dish is now ready to be served.
5.Amaranth Chicken with Red Dates and Wolfberry
300 g of Chicken Breast
50 g of Wolfberry
30 g of Red Dates
300 g of Amaranth
Step 1. Soak the wolfberry and red dates in water for 20 minutes. Next, wash the amaranth and slice the chicken breast.
Step 2. Coat the chicken breast with a layer of corn starch.
Step 3. Heat up some oil in a pot. Then, add ginger in and sauté until it turns fragrant. Next, fry the chicken until the turn golden before adding the wolfberry and red dates in.
Step 4. Add the amaranth in the pan. Add salt and stir fry the amaranth. After about 3 minutes, the amaranth is cooked and the dish is ready to be served.
