1.Sour and Spicy Century Eggs with Coriander



2 Century Eggs

5 g of Ground Coriander

10 g of Minced Garlic

10 g of Chopped Cooked Peanuts

1 tablespoon of Spicy Oil

1 tablespoon of White Vinegar

2 teaspoons of Soy Sauce

1 tablespoon of Sugar



Step 1. Remove the shell of century eggs and cut the eggs into small petals shapes. Place it on plate for now.


Step 2. Mix the minced garlic and all the seasonings together to make a sauce. Then, pour it over century eggs and sprinkle minced coriander and chopped cooked peanuts on top of the eggs.


2.Congee with Century Eggs and Lean Meat



50 g of Rice

80 g of Lean Meat

2 Century Eggs

2 g of Ginger

Cooking Oil


Chopped Green Onion

1 tablespoon of Light Soy Sauce

1 tablespoon of Cooking Wine

1/2 teaspoon of Starch

White Pepper

Chicken Seasoning Powder



Step 1. Soak the rice in water with some oil for 30 minutes.


Step 2. Shred the lean meat and marinate in light soy sauce, cooking wine, and starch for 20 minutes.


Step 3. Crack and dice the century eggs.


Step 4. Pour the rice with water and ginger shreds into a pot. Then, bring the rice to a boil. After that, turn to medium flame and keep cooking the rice while continuously stirring to prevent the pot from sticking to the bottom.


Step 5. When the rice grains start to thicken, add one of the century eggs into the pot. Then, lower the heat and cook for another 10 minutes.


Step 6. Add the lean pork shreds and the remaining preserved egg in.


Step 7. Cook the ingredients on high flame for about 2-3 minutes.


Step 8. Add salt, white pepper and chicken powder into the pot, then stir well.


Step 10. When the ingredients are thoroughly cooked, sprinkle some chopped green onion and the dish is ready to be served.


3.Sweet Potato Leaves and Century Eggs



2 Century Eggs.

300 g Sweet Potato Leaves

50ml of Water



1/4 teaspoon of Salt

1/8 teaspoon of Chicken Seasoning Powder



Step 1. Place the preserved eggs in boiling water and cook for about 5 minutes. After cooling, remove the shells and dice the eggs. Set it aside for later.


Step 2. Wash sweet potato leaves, removes the rough parts and cut it into sections. Then, set it aside for later.


Step 3. Heat up 2 tablespoons of salad oil in a pan. Then, add the sweet potato leaves into the pan and stir-fry until they turn soft.


Step 4. Add seasonings and preserved egg into the pan. Stir fry until they are cooked and the dish is ready to be served.


4.Century Eggs Tofu Pot



150 g of Century Eggs

100 g of Tofu

100 g of Sweet Potatoes

50 g of String Beans

30 g of Carrots

20 g of Chili Flakes

20 g of Scallion

10 g of Sliced Ginger

Corn Starch



1 tablespoon of Sugar

1 tablespoon of Oyster Sauce

2 tablespoons of Soy Sauce

1 tablespoon of Rice Wine

600 ml of Broth



Step 1. Coat the century eggs with dried corn starch. Cut tofu into pieces. Peel and cut sweet potatoes and carrots into strips. Set them aside for later.


Step 2. Heat up some oil in a pan. When the oil boil, place in the century eggs into the pan and fry it until turns brown. Cut the eggs into pieces and set them aside


Step 3. Heat up oil in another pan. Add the tofu in and deep-fry until them until they turn golden.


Step 4. Leave a little oil in the pot, add the ginger slices and chili strips. Fry them until they turn fragrant. Next, add the sweet potato strips, green beans, carrot strips and all seasonings in. Stir fry well and the dish is ready to be served.


5.Gong Bao Century Eggs



5 Century eggs

30 g of Dried Chilies

3 Green Onions

10 g of Ginger

4 Garlic Kernels



Seasoning A:

  • 2 tablespoon of Corn Starch


Seasoning B:

  • 1 teaspoon of White Vinegar
  • 1 tablespoon of Soy Sauce
  • 1 teaspoon of Tomato paste
  • 1 teaspoon of Sugar
  • 1 teaspoon of Cooking Wine
  • 1 tablespoon of Water
  • ½ teaspoon of Corn Starch



Step 1. Cook the century eggs in boiling water for about 5 minutes. Then, soak them in cold water before peeling the egg shells. Next, cut each egg into 8 pieces;


Step 2. Shred the ginger, cut the green onion into sections, and chop the garlic kernels.


Step 3. To make the sauce, mix seasoning B into a sauce and set aside for later.


Step 4. Heat up 500mloil in a pan. Cover the century eggs in a thin layer of corn starch. Then place the eggs into the pan


Step 5. Fry the eggs over high flame until the surface becomes slightly crispy. Then, remove the eggs from the pan


Step 6. Add the shallots, garlic, shredded ginger and dried chili into the pan. Sauté them on low flames before adding century eggs back in. Stir fry the ingredients for another 5 seconds.


Step 7. Pour the sauce made earlier into the pan and sesame oil. The dish is now ready to be served.
