1.Steamed Grouper

食譜:清蒸石斑魚

Ingredients:

1 grouper

4 green onions

30 grams of ginger

1 red pepper

Seasoning:

A. 1 tablespoon of oyster sauce, 2 tablespoon of soy sauce, 150㏄ of water, 1 tablespoon of sugar, 1/6 teaspoon of white pepper

B. 1 tablespoon of rice wine, 100㏄ of salad oil

 

Steps:

1 After washing the grouper, make a longitudinal cut from the dorsal fin, head of the fish to the tail and the keel. Place the cut down on the steaming plate (a chopstick is placed under the fish body to facilitate steam penetration).

2 Wash the 2 green onions and cut them into section. Beat, peel and slice 10 grams of ginger.  Spread them on the fish and drizzle with rice wine

3 Put it in a steamer and steam for 15 minutes until it is cooked. Remove and serve. Dispose of the green onion, ginger and steamed fish water.

4 Spread another 2 scallions, ginger and red pepper thinly on the fish. Heat up 50㏄ of oil and pour over the scallions and ginger.

5 Bring seasoning A to a boil and pour on it.

 

2.Chinese wolfberry clam grouper soup

枸杞蛤蜊石斑魚湯

Ingredients:

300g of Grouper bones

12 clams

20 grams of ginger

1 tablespoon of rice wine

A teaspoon of salt

15 Wolfberries

Scallion

Basil

 

Steps:

1 Boil the clams and ginger.

2 Add in the grouper bones and rice wine and cook for 3 minutes on medium heat. Boil the fish soup to remove any foam

3 Add in the wolfberries and green onion to boil. The saltiness of the fish soup can be adjusted by adding a little salt

4 The fish bones are cooked thoroughly and then put in the basil to complete

 

3.Curry Grouper

Ingredients:

2 teaspoons of curry powder

1 teaspoon of turmeric powder

1 red bell pepper

1 onion

Lemon juice

Salt

Black pepper

1/2 of tomato

2 small pieces of cream

Lemon zest

Cornstarch

 

Steps:

1 Pour in oil, add in curry powder and turmeric powder, stir and heat until bubbling is seen. Then, add in cream.

2 Pour in the red bell peppers, onions, lemon juice, seasonings, tomatoes and stir fry until the vegetables are soften.

3 Add in water and simmer for 5 minutes.

4 After opening the lid, add in the fish and sprinkle with black pepper. Simmer for about 15 minutes.

5 Add in the cream and wait until the cream melts to complete. Sprinkle a little lemon zest to add flavor.

 

4.Kimchi simmered grouper

食譜:泡菜煨石斑魚

Ingredients:

1 grouper

200g of Korean Kimchi

2 green onions

1 chili

20 grams of ginger

Seasoning:

A. 2 tablespoons of rice wine, 2 tablespoons of oyster sauce, 2 tablespoons of rock sugar, 1 cup of water

B. 1/2 tablespoon of sesame oil, coriander

 

Steps:

1 Wash the green onion and cut them into sections. Wash and cut the pepper into sections, wash and cut the ginger;

2 Wash the pearl grouper and draw 2 diagonal knives on the fish. The force you slice needs to reach the fish bone, but don’t cut it off.

3 Pour about 1/2 the amount of oil in the pot to heat

4 Put the grouper in and fry on high heat for about 8 minutes, remove and drain the oil for later use.

5 Heat up the pan. Add i nthe shallots, chili and ginger slices and sauté until fragrant

6 Put in the grouper, Korean kimchi and seasoning A and boil it dry. Then you can start up the pan, drip some sesame oil and sprinkle with coriander.

 

5.Qilin Grouper

食譜:麒麟石斑

Ingredients:

1 grouper

1 piece of Jinhua Ham

5 dried shiitake mushrooms

1 green bamboo shoot

Seasoning:

A. 150㏄ of chicken stock, 1/2 teaspoon of salt, 1/2 teaspoon of chicken powder

B. 1 teaspoon of cornstarch water, 1 tablespoon of sesame oil

 

Steps:

1 Cut off the fish meat from both sides of the fish. Cut along the fish body with an oblique knife into rectangular fish fillets about 2 and a half centimeters wide while keeping the shape of the fish bones intact. Set aside for later use.

2 Blanched the ham, bamboo shoots and shiitake mushrooms. Then, rinsed and cut them into pieces equal to the size of the fish fillets. Set aside.

3 Place the shiitake mushrooms, bamboo shoots, and ham between the fish fillets in sequence and place the fish on the plate after all of them are clamped. Then, place the fish head and tail on the plate, wrap with plastic wrap and put it in the microwave for 5 minutes before taking it out. Remove the plastic wrapping

4 Put seasoning A in a hot pan and boil it with cornstarch water .Add in sesame oil and pour it on the fish.
