1.Ginseng and Wolfberry Chicken Soup

食譜:人蔘枸杞雞湯

Ingredients:

1500 g of Chicken

15 g of Ginger Slices

1 large sheet of Plastic Wrap

 

Medicinal Herbs:

2 Ginseng

20 g of Chinese Wolfberries

20 g of Red Dates

 

Seasoning:

2 teaspoons of Salt

3 tablespoons of Rice Wine

 

Directions:

Step 1. Blanch the chicken in boiling water for 5 minutes, then remove it and rinse with clean water to remove blood stains, drain and put it in the inner pot of the electric cooker for use

 

Step 2. Wash all the herbs with cold water and place them on top of the chicken.

 

Step 3. Wrap the chicken together with ginger slices, salt, cooking rice wine and 5 bowls of water. Place the wrap chicken into an electric pot.

 

Step 4. Switch on the electric pot and let the ingredients simmer for about 90 minutes. After that the soup is ready to be served.

 

2.Braised Beef Soup

Ingredients:

300 g of Beef Ribs

100 g White Carrots

60 g of Carrots

2 Green Onions

30 g of Ginger

3 Garlic Kernels

1 tablespoon of Rice Wine

800 ml of Water

4 Star Anise

1/2 teaspoon of Pepper

3 cm of Cinnamon

 

Seasonings:

Seasoning A: 1 teaspoon of Bean Paste

 

Seasoning B: 1/2 tsp salt, 1/2 tsp sugar, 1 tsp soy sauce

 

Directions:

Step 1. Cut carrots and white carrots into hob pieces. Then, scald them in boiling water. Set them aside for later.

 

Step 2. Cut 1 green onion and cut the other into 3 cm sections; Peel and mince the ginger; Mash the garlic kernels. Set the ingredients aside for later.

 

Step 3. Cut the beef ribs into 5 cm pieces and blanch them in boiling water. After that, leave the ribs to cool for later.

 

Step 4. In a pot, add salad oil, shallots, minced ginger, and minced garlic. Then, sauté them on low heat for 1 minute.

 

Step 5. Add the beef pieces and the bean paste into the pot. Stir-fry them for 2 minutes. Then, add the carrot cubes and the rice wine. Stir fry them slightly.

 

Step 6. Put all the ingredients, water, salt, and sugar into slow cooker.

 

Step 7. After the cooker is done cooking, add soy sauce and sprinkle some chopped green onion on the soup. The dish is now ready to be served.

 

3.Borscht

Ingredients:

300 g of Beef Ribs

1 Tomato

Half an Onion

A quarter of Cabbage

A cup of Tomato Paste

8 cups of Water

 

Seasoning:

A pinch of salt

 

Directions:

Step 1. Wash the beef ribs with hot water, then dice; Wash and dice the tomatoes, onions, and cabbage. Set them aside for later.

 

Step 2. Pre heat a multi cooker with some oil.

 

Step 3. Add the diced onion and sauté until fragrant. Then, add the diced beef ribs and fry until turns brown.

 

Step 4. Add diced tomatoes, diced cabbage, tomato paste and water into the pot.

 

Step 5. Cover the pot and let the ingredients simmer for about 20 minutes. Before it is done cooking, open the lid and add some salt. The dish is ready to be served.

 

4.Miso Fish Soup

食譜:味噌豆腐魚湯

Ingredients:

100 g of Fish

A box of Tofu

2 tablespoons of Fine Miso

2 tablespoons of Bonito flakes

1 Green Onion

600 ml of Water

 

Seasoning:

1/2 teaspoon of Bonito Flavoured Seasoning

1/4 teaspoon of Fine Sugar

1 teaspoon of Soy Sauce

1/2 teaspoon of Sesame Oil

 

Directions:

Step 1. Wash and cut them into small pieces. Then, blanch it in boiling water. After that, leave them to cool.

 

Step 2. Wash and cut the tofu into small pieces; Wash and finely chop the green onions; Dilute the miso with 100ml of water. Set them all aside for later.

 

Step 3. In a pot, pour 500 ml of water and bring it to a boil. Then, add in the fish, tofu and miso.

 

Step 4. After the soup boils, switch the flame off before adding the bonito flavoured seasoning, sugar and soy sauce.

 

Step 5. Turn the flame to low and let it simmer for about 1 minute. After that, add bonito flakes and chopped green onion. Next, turn off the heat and drizzle with sesame oil. The soup is now ready.

 

5.Mushroom Chicken Soup

Ingredients:

1/4 of Chicken

10 Dried Shiitake Mushrooms

30 g of Old Ginger

1 Shallot

600 ml of Water

 

Seasoning:

1 teaspoon of Salt

 

Ingredients:

Step 1. Chop the chicken into small pieces and blanch them in boiling water for 1 minute. Then, remove them from the water and set aside for later.

 

Step 2. Soak dried shiitake mushrooms in water until become soft. Next, cut off the stems off and set aside for later.

 

Step 3. Peel and slice old ginger; Cut green onion into sections. Set them aside for now.

 

Step 4. Put all the ingredients into a pot with water and seasonings.

 

Step 5. Let the ingredients simmer for about 1 hour. After that the soup is ready to be served.
