1.Mexican Tomato Sauce, Salsa.
- 500g Tomatoes
- 30g Coriander
- 30g Virgin Olive Oil
- 12g Garlic
- 5g Sugar
- 15g Lemon Juice
- 50g Onion
- 4g Salt
- 15g Tomato Sauce
- 5g Black Pepper
Step 1 : Slice the tomatoes in half and squeeze out the excess water. Then cut the tomatoes into small cubes.
Step 2 : Wash the coriander, then dry off the water. Next, minced them up and mixed them with the tomatoes.
Step 3 : Crush the garlic into paste. (Do not cut them or they will taste bad)
Step 4 : Add the lemon juice. Then, add the sugar followed by the chopped onion.
Step 5 : Add some salt for seasoning. Then, add in an appropriate amount of black pepper to add more flavour.
Step 6 : Now, you can add in some tomato sauce or Tabasco chili sauce depending on your preference. Next, add in the virgin olive oil.
Step 7 : Stir the mix well then put the mix into the refrigerator for about 30 minutes to allow the garlic and onion taste to fuse together. When removing the sauce from the fridge, drain the excess water from the sauce. The sauce is now ready to be used.
- 5 Beef Tomatoes
- 5 pieces Oyster Mushrooms
- A moderate amount of German sausage
- Half an Onion
- A pinch of Black Pepper
- A moderate amount of Cheese
- A moderate amount of whupped cream
- A moderate amount of Butter
- A pinch of salt
Step 1 : Hollow out the inside of the beef tomatoes and set them aside.
Step 2 : Slice the mushroom and shred the onion. Heat up a pan with butter and fry the onion and mushrooms. Next, add some black pepper, salt and more butter. Cooked them until they become thick and sticky sauce.
Step 3 : Cut the sausages into small pieces and stuff them into the hollowed out tomatoes. Next filled the tomatoes with some of the mushroom sauce.
Step 4 : Spread some cheese to cover the top of the tomatoes. Next, placed them into the oven and baked for about 15 minutes.
3. Stewed Beef Rib with Tomato
- 600g Beef Ribs
- 6 Large Tomatoes (or 12 Small Tomatoes)
- 1 Onion
- 1 Carrot
- 1 Stalk Curry Leaves
- 1 Stalk Spring Rosemary
- 100ml Rice Wine
- A moderate amount of salt and pepper
Step 1 : Remove the stalks of the tomatoes and cut them in half. Next, wash and cut the beef ribs into small pieces.
Step 2 : Cut the carrot into large chunks and the onion into small pieces.
Step 3 : Place the ingredients into a pressure cooker then pour in some rice wine onto the ingredients. Cover the pressure cooker and let it simmer for an hour over a low heat as if it is in a normal cooking pot.
Step 4 : Next, set the pressure cooker to cook for 15 minutes. Once it is done cooking, add an appropriate amount of pepper and salt before indulging on it.
4.Tomato Cooked Rice
- 2 Tomatoes
- 4 Cloves Garlic
- 1-person portion Rice
- Moderate amount of Salt
- Moderate amount of Olive Oil
- Moderate amount of Water
Step 1 : Cut the tomatoes into small pieces and mince the garlic. Wash the rice and set them aside.
Step 2 : Heat up a pan with some oil, fry the mince garlic until it become fragrant. Next, add the diced tomatoes and cook them until they become soft.
Step 3 : Add in the rice and drown it with water over the ingredients. Cook the rice over high heat for 5 to 6 minutes until they are cooked. Then, allow the rice to dish to simmer over medium heat
Step 4 : Stir the rice in regular intervals to ensure that the rice do not stick to the pan. Pour in additional water, but to not pour in too much to prevent it from becoming a porridge instead.
Step 5 : Once the rice is cooked to your desired taste, turn off the flame and cover the rice. Wait for approximately 10 minutes for the rice to absorbed the water. Your Tomato Rice is now ready to be served.
5.Honey Tomato Jelly
- 2 Large Tomatoes
- 20g Agar-agar Powder
- 1 tablespoon Honey
- 300ml Water
Step 1 : Blanch the skins of the tomatoes then beat them into juice.
Step 2 : Prepare a soup pot with the appropriate amount of water and the agar powder. Allow the mix to boil. Once it is boiled, turn off the flame.
Step 3 : Now, pour the tomato juice into the agar-agar mix and mix them evenly.
Step 4 : Then, put the mixture into the refrigerator to turn solid.
Step 5 : Add an appropriate amount of honey according to one’s preference before consumption.
6.Tomato Crispy Tofu
- 1-piece Northern Tofu
- 3 tablespoons Tomato Sauce
- Moderate amount of Cooking Oil
- 1 tablespoon Plain Flour
- 1 Tablespoon Corn Starch
- 2 tablespoons Tomato Paste
- 1 tablespoon Sugar
- 1 teaspoon Rice Vinegar
- 1 teaspoon Salt
Step 1. Wash one piece of northern tofu and cut it into small cubes.
Step 2. Take a clean small bowl, add 1 spoon of cornstarch, 2 spoons of ordinary flour, and 1 spoon of cooking oil, mix well, and make a batter
Step 3. Put the cut tofu in and spread the batter evenly.
Step 4. Pour an appropriate amount of cooking oil into the pot, and fry the battered tofu several times in small amounts until turns golden brown.
Step 5. Leave some oil in the pot, add in the seasoning and slowly stir-fry on low heat the tomato sauce until it turns into a bright red color. When the soup becomes a bit sticky, and the tomato sauce is cooked.
b Put the fried crispy tofu into the pot and stir evenly, so that the entire crispy tofu is covered in a layer of tomato sauce. The tofu is now ready to be served.
