1.Sweet and Sour Chicken

食譜:糖醋雞丁

Ingredients:

2 pieces of chicken breast

1/2 onion

2 green onions

2 garlic cloves

Fried powder:

Sweet potato powder 50 grams

Seasoning:

1 tablespoon of white vinegar

2 tablespoon of tomato paste

3 tablespoons of rice wine

1 tablespoon of granulated sugar

1 teaspoon of sesame oil

Marinade:

3 tablespoons of soy sauce paste

Cornstarch

Five spice powder

 

Steps:

1 Cut the chicken breast into chunks, marinate them in the mixed marinade for 30 minutes and then dip in sweet potato powder for later use.

2 Shred the onion; cut the green onion into sections; slap the garlic head flat for later use.

3 Heat up an oil pan to a temperature of about 190°C, then add the chicken nuggets dipped in powder to fry. Once they have color, pick them up for later use.

4 Start up a wok, add 1 tablespoon of salad oil, add all the ingredients and sauté

5 Put in the fried chicken nuggets and seasonings , stir-fry over medium heat and cook until they soften.

 

2.Sauce Fried Chicken

Ingredients:

150g of Chicken breast

1/2 green pepper

1 green onion

5 grams of ginger

Seasoning:

A. 1 teaspoon  of sweet noodle sauce, 1 teaspoon of soy sauce, 1 teaspoon of fine sugar, 1 tablespoon of rice wine, 2 tablespoon of water

B. 1 teaspoon of cornstarch water, 1 tablespoon of sesame oil

Marinade:

A pinch of salt

1 teaspoon of cornstarch

1 teaspoon of sesame oil

 

Steps:

1 Wash and dice the chicken breasts, put them in a large bowl, add all the marinade, mix well and marinate for about 10 minutes. Then, place them in hot oil and fry them over  medium-to-small fire. Once they are done, remove and drain the oil for later use.

2 Wash the green peppers, remove their stalks and seeds and cut them into pieces. Wash the green onions and cut them into sections. Wash the ginger, peel and slice them before setting aside.

3 Pour oil into a pot to heat, add in all the ingredients in Step 2 and sauté until fragrant. Then add all seasoning A and stir-fry evenly in the large bowl in Step 1. Lastly, add the well-mixed cornstarch water to thicken the sesame oil.

 

3.Spicy Chicken

Ingredients:

150g of chicken breast

1 red pepper

2 garlic cloves

15 grams of ginger

1 green onion

Seasoning:

1 teaspoon of spicy bean paste

1/2 teaspoon of sugar

30cc of Water

Marinade:

1/2 teaspoon of soy sauce

20cc of Water

1 teaspoon of cornstarch

1/2 teaspoon of Shaoxing wine

1/4 teaspoon of sugar

Salt

 

Steps:

1 Wash and dice the chicken breasts, add in all the marinade and marinate for about 15 minutes.

2 Wash the red pepper and cut them into diagonal slices. Wash and cut the green onion; mince garlic and ginger before setting aside.

3 Heat up a pan with oil and heat to about 120°C. Add in the diced chicken and stir until the chicken becomes white and remove.

4 Leave a little oil in the pot , add ginger, garlic and chili flakes to sauté until fragrant. Add in the spicy bean paste, water and sugar and stir-fry for a while. Then, Add the chicken cubes and fry for about 1 minute.

5 After thickening with the white powder water, serve it on a plate and place the green onions on top.

 

4.Fried chicken with okra and tomato

食譜:秋葵蕃茄炒雞丁

Ingredients:

150g of Chicken breast

100g of Okra

100g of Tomatoes

2 garlic cloves

1/2 teaspoon of olive oil

Seasoning:

1 tablespoon of soy sauce

1/2 teaspoon of sugar

1/2 teaspoon of salt

Marinade:

1 teaspoon of wine

1 teaspoon of soy sauce

1 tablespoon of water

1/2 teaspoon of cornstarch

 

Steps:

1 Dice the chicken breast, add in the marinade and stir well for 15 minutes.

2 Wash the okra, dice the tomatoes and slice the garlic for later use.

3 Boil the okra in a pot of water, rinse with cold water and dice. Then, add in the chicken dices and blanch until they are 80% cooked, then remove and drain.

4 Put the oil in a non-stick pan and sauté the garlic slices. Then, add in okra, diced tomatoes and diced chicken to stir fry. Add seasonings and stir fry evenly before serving.

 

5.Cashew Chicken

Ingredients:

A pair of Chicken breast

150g of Fried cashew nuts

2 garlic cloves

1 green onion

Seasoning:

A pinch of salt

Marinade:

1 teaspoon of sugar

1 teaspoon of salt

1/2 tablespoon of cornstarch

1/2 of egg white

1 tablespoon of wine

 

Steps:

1 Wash and dice the chicken breasts, marinate with all the marinade for about 20 minutes.

2 Wash the green onion and them cut into sections. Slice the garlic and set aside.

3 Heat up a pan with 5 tablespoons of oil. Add the diced chicken with cold oil, quickly stir-fry the diced chicken over high heat until the color changes. Then, pick up the oil and set aside.

4 Leave a little oil in the pot  and sauté the onion and garlic slices over high heat.

5 Add in the diced chicken and fried cashew nuts. Stir-fry evenly and season with salt.
